Normally I would never blog a recipe, but I just created the best lunch ever! It is giving me a total mouth orgasm and for me that is very rare. I normally do not get pleasure from food, but this is giving me all kinds of pleasure. Because of that, I thought I would share my creation. And it only takes 15 minutes to prepare including prep time. I am not one for exact measuring of everything so some of the measurements are approximate.
You will need:
6 Marinated Quartered Artichoke Hearts
6 Kalamata Olives (pitted and halved)
2 Plum Tomatoes
1 Red Bell Pepper
4 – 8 Cloves of Garlic, minced (I used 4 big ones that worked out to about 1/3 of a head of garlic)
1/4c Olive Oil
1 tbsp Parsley (approx)
1 tbsp Pepper (approx)
1 tsp Basil (approx)
I threw it all in a small sauce pot and cooked it on high for about 8 minutes. Then I threw it in a blender and then tossed it with pasta.
It is kinda like a pesto sauce, but not.
